Ingredients:

  • 1 cup basmati rice, washed and drained
  • 1 large onion, finely chopped
  • 2 green chilies (shilma mirch), finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tablespoon ghee or vegetable oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/4 cup tomato puree
  • 2 cups water
  • 1 tablespoon curd
  • 1 tablespoon butter
  • 1/4 cup grated cheese

Instructions:

  1. Sauté aromatics: Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add onions, green chilies, garlic, and ginger. Sauté until the onions turn golden brown.
  2. Add spices and tomato puree: Stir in turmeric powder, garam masala, and salt. Cook for another 30 seconds, stirring continuously. Add the tomato puree and cook for 2-3 minutes more.
  3. Add rice and water: Add the washed basmati rice to the pot and stir to coat with the spices. Pour in the water and bring to a boil.
  4. Simmer and cook: Reduce heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the water has been absorbed.
  5. Add dairy and cheese: Remove from heat and stir in the curd, butter, and grated cheese. Let it sit for a few minutes to melt the cheese and incorporate the flavors.
  6. Fluff and serve: Fluff the rice with a fork and serve hot.

Enjoy your upgraded roadside pulao!
